Week 10 of 52 Weeks of Food


This week features a very special meal. Our sacred weekend ritual breakfast – the Fry Up. Kris is king of the kitchen for this one, but this week, he let me do the fry up for my 52 weeks of food challenge.

I will admit, as delicious as it was, there is something to be said about how Kris makes it that I wasn’t quite able to achieve.

Here’s the how-to:

Ingredients (serves 2):

Bacon: 200 grams, chopped into strips or medium sized pieces

Onion:- 2 medium, sliced small or chopped

Garlic: 2 tsp, chopped fine

Green Chillies: 2 chopped fine (optional)

Mushrooms: 4-5 large button mushrooms, sliced thin

Cherry tomato: 200 grams or 2 regular tomatos

Haloumi cheese: 100 grams, sliced into long strips

Hash browns: 2 (We use Aloo Tikkis instead, for a bit of an Indian touch)

Bread: 6 slices

Salt: To taste

Pepper: To taste


For the tomato sauce:

Saute 1 tsp of garlic till fragrant. Add the tomato and mix well.

Cook till the tomato completely softens and breaks down.

Turn up the heat and let the bottom of the pan char a bit stirring the tomato well so that it doesn’t burn.

Season with salt and pepper and keep aside.

For the fry up topping:

Saute the remaining garlic, onions and chillies till fragrant. Cook till the onions are translucent.

Add the bacon and cook till the bacon is done.

Add the mushrooms and cook till done.

Season with salt and pepper as required.

Assembling the fry up:


Toast the bread well.

Spread the tomato sauce/relish on the toast.

Top the toast with a generous serving of bacon-onion-mushroom mix.

Serve with grilled haloumi slices and hash browns.

Finish with some cracked pepper and serve.
